Polyunsaturated fat in the Omga-6 group: This type of fat is mainly in vegetable oils such as safflower, sunflower, sesame, soybean, and corn oils. Omega-6 fatty acids are found mostly in liquid vegetable oils like soybean oil, corn oil, and safflower oil.
The Polyunsaturated fat found in fresh seafood is very healthy.
Omega-3 fatty acids are found in fatty fish and shellfish as eicosapentaenoic acid (EPA) and docosahexaenoic acid (DHA). Salmon, anchovies, herring, sardines, Pacific oysters, trout, Atlantic mackerel, and Pacific mackerel are high in EPA and DHA and lower in mercury. A healthy diet includes 8 ounces or more of these types of fish a week, averaging 250 mg a day of these omega-3 fatty acids.footnote2

The problem with polyunsaturated fats is that all these double bonds make them susceptible to oxidation. The fatty acids react with oxygen in the atmosphere and start deteriorating. That’s why such foods must be fresh. In the case of vegetable oils, if you could actually produce it yourself that would be best.

If you have a lot of polyunsaturated fatty acids in your body, your cell membranes are more sensitive to oxidation.
In short, you have a very high level of fragile fatty acids that can easily be degraded to form harmful compounds .
For this reason, your better choice is to eat seafood, and cook with Olive Oil, Coconut oil and Palm oil. All others can be had in smaller amounts. Vary your diet by eating a mix of healthy fresh foods and lots of vegetables as our forbearers did.
